Recipe Monday; Easy Green Chile Enchiladas











I like easy meals and this Recipe Monday meal is no exception, I love enchiladas and wanted to make some that were a little more authentic than the ones most people make but still 30 minutes to make.  These enchiladas were amazing and we're less than $10.00 to make and serves 4.








What you'll need:
1 tsp oil of your choice I used Vegetable oil
1/2 cup Pictsweet seasoning blend (onions, celery, green peppers, red peppers, parley flakes)
1 1/2 cups mild cheddar or monterrey jack or mix cheese
2 skinless boneless chicken breasts
8 tortillas, I used corn & flour blend
Fronterra green chile enchilada sauce



How to prepare:
Marinate chicken overnight (I used McCormick 25% less sodium Montreal Chicken and two Tbsp of Kraft Greek dressing).
Preheat oven to 400°
Place 1 tsp of oil in skillet turn heat to medium cook veggies until translucent, set aside.
Cook chicken in skillet with 1/2 cup water, 7 minutes on each side or until done on medium heat.  Do not overcook or chicken will be rubbery.  Let cool and fork shred.
Warm tortillas in microwave for 30 seconds.
Place enough sauce to coat bottom of 8in to 9in pan.
Spread sauce on tortilla and sprinkle cheese, add veggies and shredded chicken.
Roll and place in pan, add remaining sauce and heat in oven for 10 minutes.

























Note: I added a little cheese on top but that is optional.
